Drops is translating panchetta as bacon. In English, bacon and panchetta are two differerent foods. They’re both made from pork belly, but panchetta is cured with lots of salt and pepper and rolled up. Bacon isn’t. Bacon is brined and smoked.

Prosciutto is also not ham. English uses both terms for two different foods. Prosciutto comes from the hamhock of the pig, but it’s not the same as ham because it has been cured and is usually then not cooked to eat it - ham must be cooked in order to eat it.
